There are 9 cider-apple varities in our orchard; most of the apple production is used by Calvados Père Magloire but we also produce a small quantity of high quality farm products: pure juice cider, Calvados AOC fermier du Pays de la Risle and Pommeau de Normandie AOC
Our cider is exclusively made with pure juice of our cider-apples (without frozen apple concentrate or water !)
brut or "demi-sec"
(= without frozen concentrate, without water) pasteurised
Our Calvados is Calvados AOC produit fermier du Pays de la Risle (= exclusively made with our apples, no water adding, less than 750 l/t, at least 4 months between pressing and distillation, aged and bottled at farm).
Our Calvados is aged in small oak casks (430 l maximum) in a traditional cellar without air conditioning (the aging is better but the losses are more important).
Our Calvados is naturally coloured by oak (not by caramel).
Our Calvados VSOP : Silver Medal at the IDAC INAO competition "Lauriers des AOC cidricoles" during the International Fair of Caen 2003.
Our Calvados Hors d'âge 6 years : Bronze Medal at the IDAC INAO competition 6-10 years "Lauriers des AOC cidricoles" during the International Fair of Caen 2006.
The apples for the most of our Pommeau de Normandie are picked by hand and matured sheltered in palloxes before pressing. The most is mixed with Calvados AOC and matured at least 14 months in small oak casks.
Pommeau de Normandie is an original aperitif drink and an excellent accompaniment for blue-cheeses or desserts.
